I assembled a small batch of green chile chicken enchiladas from stuff on hand, and a package of shredded chicken from the grocery store’s deli. I’d rather use corn tortillas of course, but my partner doesn’t like them. They still turned out pretty good.

I made Teriyaki steak bowels. They weren’t...great but they were enjoyed by the family.

I made fajita tacos using leftover fajitas and a corn salsa/sauce on top. Was quite good. Seems Oppo is quite Mexican tonight. I expect tomorrow morning to be a bit like:

I’m jealous! I’d love a beer, but I’m on call this weekend. I’ve already driven 300 miles today, I’m hoping nothing else comes up this weekend because it’s snowing again.

Well, the can of green chile I had turned out to be mild so I think I’ll be spared. I m ust get hot next time though.

These turned out way better than I thought they would. First I didn’t have any onions, then I realized the green chile I used was mild. Also, the store deli shredded chicken is really bland. So I simmered the chicken in the green chile for a bit, added a few seasonings and some garlic, a nd that did the trick.

I miss having an all you can eat sushi place you can trust. The ones near me are........blech. Way way way WAY too many health code violations, and many are serious. Weirdly enough, the one i miss is in Flint, MI. Always had a great time there in college with all my friends.

I threw off my whole schedule by getting brunch today, but I might eventually make broccoli/cheese/rice casserole. Not hungry right now though.

I made a very lovely tortellini sausage pasta bake. I almost took a picture it was so pretty.
p.s. corn tortillas are nasty

Soft corn tortillas by themselves are not good, but I’m fine with them when they are cooked. Enchiladas with flour tortillas are a little weird to me but I’m getting used to them.

Unfortunately, this one is starting to get a bit sketchy. It’s nice because it’s served buffet style and you can watch the chefs cranking out rolls as fast as they can, but this time around they were having some a/c issues and it didn’t seem as clean as last time. There’s another place where you can order unlimited rolls and I think they are a bit better, but you can’t get a sampler plate like what I had tonight.

We can’t abandon the turkey. The carcass is needed for the turkey carcass gumbo!
Although I am now thinking about all of the other sides... potato salad, candied yams, rolls, stuffing..... OMG, I’m ready for Thanksgiving again!
